International variety with the most widespread white fruit in the world that has met in Sicily the ideal environment to produce wines with singular richness and aromatic intensity. The harvest is manual, and thanks to the Sicilian sun very early, that is during the second decade of August and the first ten days of September. The vinification takes place with cryomaceration for about 6 hours, soft pressing and fermentation at controlled temperature in steel. It has a delicate flavor with marked floral notes. Pleasantly aromatic and with good acidity. We recommend it as an aperitif, with medium-aged cheeses, fish and white meats.
