Chianti Classico is one of the most noble wines in the world and it has the name of the Earth from which it is born, respecting strict standards that protect and guarantee quality. It is produced in 70000 hectares of territory between the cities of Siena and Florence, in an area that embraces 8 municipalities: Greve in Chianti, Barberino Val d'elsa, Tavarnelle Val di Pesa and San Casciano in Val di Pesa in the province of Florence; Castellina in Chianti, Gaiole, Radda, Castelnuovo Berardenga and part of the town of Poggibonsi in the province of Siena. The reserve requires a minimum ageing of 24 months, of which at least 3 aging in the bottle. Compared to the Chianti Classico, the reserve is a nobler wine, has a greater finesse, prolonged odor and cleaner taste. Merit of the chosen grapes that compose it and of the ageing. It depends on both the vintage and the harvest and the cultivation of the vineyard. Only 20% of the Chianti Classico becomes reserve: He will be destined the best grapes.

UVAGGIO: Sangiovese, Canaiolo and complementary grapes
GRADO: 13,50 % vol
WINE MAKING AND AGEING: Temperature-controlled fermentation (at 26 °C; 79 °F) lasts for around 20 days, with pumping over in an open vat during the initial phase; the malolactic fermentation takes place immediately after the alcoholic one. This is followed by a long period of maturation (around 2 years) in new French oak barrels.
TASTING NOTES: On the palate the wine displays relatively dry and harmonious notes, while also being slightly tannic, with a flavour that becomes increasingly velvety over time.
COLORE: Ruby red colour, which has a tendency to become garnet red as the wine ages.
ABBINAMENTI: Pairings: Ideal with red and white meat, as well as pairing well with poultry, hare and various cheeses.
